Usili(crumbled lentil curry)

Usili is a South Indian delicacy which is actually crumbled lentil curry. The actual recipe involves lots of oil as the lentils are cooked directly in a deep pan . I have modified the recipe by steaming the prepared coarse paste of soaked lentils and then crumbling it. I have seen that the taste is not compromised and of course our health too. This is a highly nutritious recipe involving lots of lentils which are soaked (nutrition value raises by soaking too) and then it is mixed with sauteed steamed veggies of your choice. Some veggies goes very well with this lentil crumbles like Capsicum, beans, cluster beans, methi leaves, banana flower, purple brinjal. In this recipe usually tur daal( daal used in sambar) and chana daal is used. You can prepare it completley by using chana daal which tastes great and is popular among chefs. for a change you can even substitute tur daal with yellow moong daal. Whole Wheat jaggery Banana cake

Whole- Wheat banana cake with strawberry (eggless) We have umpteen recipes of banana cakes till now by various enthusiastic passionate chefs. You can include this too from another passionate health home chef:) This recipe is totally healthy by using over ripe bananas which we usually discard, replacing all -purpose flour with whole -wheat flour, replacing butter for oil and also the option of grated jaggery. The addition of strawberry crush was just experimental and it actually tasted great. You can completely omit that. For a change , you can add choco chips too. It tastes great with bananas. Ingredients: • Whole wheat flour- 1 ½ cup • Oil- ½ cup • Light brown sugar (or grated jaggery)- 1 cup (100 gms) • Thick curd- 150 gms • Ripe Bananas- 2 long ones or 5 short ones- Mashed • Strawberry crush- 1 to 1 ½ tbsp • Baking powder- 2 tsp • Baking soda- 2 tsp • Vanilla essence- 1 tsp • Cinnamon powder- ¼ tsp • Walnuts- 3 tbsp finely chopped Method: • P

Iron rich Curry leaf powder

Curry Leaf instant powder Curry leaves are rich in Iron and folic acid and is highly recommended for people with anaemia. It has been proven by  Ayurveda that it is good for gastrointestinal issues as well as for diabetes.The presence of various vitamins like vitamin A, B, C and E help in reducing oxidative stress and free radical scavenging activity. Curry leaves can be added to your curries, vegetable stews and soups. We see that either us or our family members remove the curry leaves aside before eating just by habit. Instead of shredding the curry leaves by hand, use scissors to chop them finely and then add to your dishes or grind them along with tomatoes in sambar or rasam. You can use curry leaves by adding to chutneys, grinding along with tomato and tamarind while making sambar or by preparing delicious powders which can be just mixed with hot rice. Anaemic conditions- Use about 2 tsp of this powder once in a day in your lunch time along with a balanced diet of carbs
