Whole- Wheat banana cake with strawberry (eggless)
We have umpteen recipes of banana cakes till now by various enthusiastic passionate chefs. You can include this too from another passionate health home chef:)
This recipe is totally healthy by using over ripe bananas which we usually discard, replacing all -purpose flour with whole -wheat flour, replacing butter for oil and also the option of grated jaggery.
The addition of strawberry crush was just experimental and it actually tasted great. You can completely omit that. For a change , you can add choco chips too. It tastes great with bananas.
Ingredients:
• Whole wheat flour- 1 ½ cup
• Oil- ½ cup
• Light brown sugar (or grated jaggery)- 1 cup (100 gms)
• Thick curd- 150 gms
• Ripe Bananas- 2 long ones or 5 short ones- Mashed
• Strawberry crush- 1 to 1 ½ tbsp
• Baking powder- 2 tsp
• Baking soda- 2 tsp
• Vanilla essence- 1 tsp
• Cinnamon powder- ¼ tsp
• Walnuts- 3 tbsp finely chopped
Method:
• Preheat oven to 180 centigrade
• Grease a 7-inch cake tin. Place a parchment paper in the bottom (cut it according to diameter of the tin) and grease it also.
• Sieve the wheat flour, baking powder, soda, and cinnamon powder and keep aside.
• To the mashed bananas, add the oil and sugar. Beat until the mixture looks smooth. Use a hand mixer or whisk well with hand itself.
• Add vanilla essence to the banana mixture.
• Whisk the curd till smooth and add to the banana mixture.
• Now add half the flour mixture and just fold it.
• Add the remaining mixture and walnuts and fold till all are well mixed.
• If the batter is very thick as wheat flour quality differs then add little (about 1 tbsp.) of buttermilk or milk to the batter.
• Pour the batter to the cake tin and bake in the middle shelf of your oven for 40 minutes or till the cake is done.
Note:
I have used organic whole wheat flour from my nearest org. store in this recipe . It is called white whole wheat flour which is great in baking and it is actually a variety of whole wheat flour made from Yellow variety wheat grains. Annapoorna Atta is very good for baking too. If you are using organic whole-wheat flour or any other brand or hand milled flour, then use half and half of Maida and whole-wheat flour.
